Keeping an open palate is as important as keeping an open mind when traveling, especially when spearfishing with the best in Micronesia. One of them had fetched me a snack from inside a giant clam at the bottom of the sea. I was now chewing on the long, slimy mixture of organs while frantically trying to keep my head above the water. His nephew, who was in the boat, was skillfully slicing up a rabbitfish speared minutes ago, which I was about to be served with lemon juice and soy sauce. Food doesn’t get any fresher than this.
